Chili Recipe

Chili Ingredients

1 tbsp extra virgin olive oil

1 tbsp virgin coconut oil

2 pkgs. ground turkey lean (3lbs each)

3 tbsp chili powder

2 tbsp cumin

2 large onions, diced

4 garlic cloves, minced

1 (14.5 oz) can Fired Roasted Diced Tomatoes

3 cups organic Marinara sauce

2 cans black beans, rinsed and drained

1 can white kidney beans, rinsed and drained

Corn Bread Muffins

Dry Ingredients

1 1/2 cups almond flour, blanched

1/4 cup organic whole grain (coarse) cornmeal

1/4 cup organic flaxseed meal

1 tbsp whey protein powder, concentrate1

1 tsp cream of tartar

1/2 tsp aluminum-free baking soda

1/8 tsp salt

Wet Ingredients

1 cup low-fat organic buttermilk

1 whole egg

1 egg white

1/2 cup xylito
For Chili: In a large saucepan, brown turkey meat then set aside. Heat the oil blend and saute the onions and garlic until browned. Then return the meat back into the pan and combine. Add the diced tomatoes, marinara sauce, beans, chili powder and cumin, salt and pepper, stir to combine. Simmer to 20 to 25 minutes and serve warm.
For Corn Bread Muffins: Preheat and oven to 375 degrees. Line 12 muffin cups with paper liners. Whisk dry ingredients together in a mixing bowl, set aside. Using an electric mixer blend wet ingredients until light and fluffy then slowly add to the dry mixture, be sure not to over mix. Divide batter among muffin cups and bake for 20 to 22 minutes or until golden brown. Use a toothpick to check for readiness if needed.
